OUR WINES: Vin santo

The grape harvest (white malvasia and Trebbiano) is effected slightly later than usual and the grape is hung and dried for around three months then squeezed manually with a press before being transferred into the barrels, 60% filled, where the alcohol fermentation takes place and it matures for about 5-6 years.

  • Grape: 70% Trebbiano and 30% Malvasia bianca
  • Alcohol:16% vol.
  • Maturation: 6 years (barrique 250 L.)
  • Growing system: spurred guyot chord
  • Year: 1995
