GRAPPA
The best residue mix fermented from Sangiovese, Canaiolo and black Malvese
vines are distilled within three days of the drawing off process in steam cauldrens
to obtain the selected Grappa.
Distillation method: the residue mixes are distilled using traditional methods,
a steam process using a prized alembic made from copper. The metal used in the
construction of the plant , favours distillation without imperfections and fully
exalts the organoleptic characteristics of the mix.
Refinement: 3 months in inoxidizable steel
